A Spundaparat. Otherwise known as a bunging device. It allows us to capture the CO2 generated in the fermentation process in order to naturally carbonate the beer. It's set to a vent only when the tank reaches a pre-determined pressure.
After opening our doors in December of 1991, Schlafly Beer has been dedicated to crafting delicious beers in a variety of styles. Eschewing the practice of clever names, we identify our beers by their style; everything from Oatmeal Stout to Wit Bier.

I was introduced to my first Spundaparat in the cellars at Brauerei Heller Trum in Bamberg.
Then we drank Urbock from the source. Ah, nostalgia.
